Rosemary Allison's Blueberry Blintz Souffle (Print this)
Feeds 6 to 8 for a great Sunday Brunch or special Holiday breakfast!
Ingredients:
10 Fresh eggs (cold)
1 stick (1/4 lb.) butter
2 packages Frozen Blueberry Blintz's from supermarket 10 eggs separated
1 cup sour cream
1 cup sugar
cup orange juice
tablespoon vanilla
package (16 oz) frozen or fresh blueberries
cups maple syrup
1 tsp. Cinnamon
cup cornstarch

Preheat oven at 375 degrees. Put egg whites in mixer and mix at high speed gradually adding sugar until peaks form. Set aside. Melt butter and put at bottom of glass pyrex rectangular baking dish. Place blintz's in rows on top of butter. Mix sour cream and egg yolks, orange juice, cinnamon, cornstarch & vanilla. Fold into egg whites. Pour over blintz's. Bake approx. 1 hours until firm in center and lightly browned on top. Mix blueberries with syrup and microwave for 40 seconds on high. Serve souffle with blueberry sauce as condiment.
